New York Prosciutto Squares

1 tablespoon LAND O LAKES® Butter
1/2 cup chopped mushrooms
1/4 cup chopped onion
1/4 cup chopped chives
16 ounces (4 cups) LAND O LAKES® Provolone Cheese, shredded
2 ounces sliced prosciutto, finely chopped*
4 eggs, beaten
1/2 teaspoon white pepper
Heat oven to 350°F. Melt butter over medium-high heat in 8-inch skillet. Add
mushrooms and onion; continue cooking until liquid is absorbed (2 to 3 minutes).
Remove from heat; cool 10 minutes.
Stir together chives, cheese, prosciutto, eggs and pepper in large bowl. Stir in
mushrooms and onion.
Spread cheese mixture into greased and floured 8-inch square baking pan. Bake
for 30 to 40 minutes or until toothpick inserted in center comes out clean. Let
stand 5 minutes; cut into squares.
*Substitute 2 ounces finely chopped corned beef.
