Stilton and Bacon Puffs

This is a simple recipe that uses basic puff or choux pastry as its base. These
are delicious served warm as is or they can be stuffed with all manner of
things.
Ingredients:
1/2 cup water
1/4 cup (1/2 stick) unsalted butter, cut into bits
1/2 cup flour
2 large eggs
1/4 pound Stilton or other blue cheese such as Cabrales, crumbled (about 1 cup)
4 bacon slices, cooked crisp and finely crumbled
3 tablespoons minced green onion
Salt, pepper
Directions:
In small heavy saucepan, combine water and butter. Bring to boil over high heat.
Reduce heat to moderate and add flour all at once, beating mixture with wooden
spoon until it pulls away from sides of pan and forms a ball.
Remove pan from heat. Add eggs, 1 at a time, beating well after each addition.
Stir in cheese, bacon, green onions and salt and pepper to taste.
Using pastry bag with plain tip or with wet teaspoon, drop rounded teaspoon-size
mounds of mixture 2 inches apart onto lightly buttered or parchment-lined baking
sheets.
Bake on middle rack at 425 degrees 15 to 18 minutes or until puffs are crisp and
golden.
Makes about 24 puffs.
