Pizza Potato Skins
4 small baking potatoes, washed
1/2 c. spaghetti sauce
1/2 c. shredded part-skim
Mozzarella cheese (2 oz.)
1/2 tsp. oregano
Preheat oven to 450 degrees. Pierce potatoes and place on oven rack. Bake for 40
to 45 minutes, set aside to cool. Cut lengthwise into quarters, remove potato
pulp to form shell, leaving 1/4-inch. Keep the pulp (can be mashed). On nonstick
baking pan or one sprayed with Pam put shells. Spread 1 1/2
teaspoon spaghetti sauce over each shell. Sprinkle with 1 1/2 teaspoon cheese.
Sprinkle with oregano. Bake for 15 minutes or until cheese is melted and skins
Makes 4 Servings.
