Chili Cheese Egg Squares
Ingredients:
5 eggs, beaten
1/4 cup flour, all purpose
1/2 tsp baking powder
1 cup non-fat cottage cheese
1 cup shredded low-fat Cheddar cheese
1 can, 4.2oz, diced green chilies
1/2 cup diced red pepper
Method:
In large bowl, beat together eggs, flour, and baking powder until well blended.
Stir in cheeses, chilies, and red pepper. Pour into an 8x8-inch baking dish;
bake in preheated 350 degree F. oven until knife inserted near center comes out
clean, 45 to 55 minutes. Let stand 10 minutes. Cut into 2-inch squares. (from
