Stuffed Cantaloupe
Ingredients:
1 ripe cantaloupe
1 large pkg. cream cheese ( 8oz )
1 can pineapple, drained (16oz.)
1 c. chopped Macadamia nuts
Method:
Cut cantaloupe top and clean out center of seeds. Sort of like your cleaning out
a pumpkin. Mix cream cheese, pineapple and nuts. Stuff cantaloupe with cream
cheese mixture. Place top back on cantaloupe and refrigerate 3 to 4 hours or
overnight. To serve: Slice across about 2-inches thick. Sprinkle extra chopped
macadamia nuts over the top
