Buttermilk Meatballs
Ingredients:
1 lb. ground beef
3/4 c. milk
1/2 c. fine dry bread crumbs
1/4 c. finely chopped onion
1 1/2 tsp. salt
1/8 tsp. pepper
1/4 c. butter
2 tbsp. flour
2 tsp. sugar
2 c. buttermilk
2 tbsp. prepared mustard
Directions:
Combine ground beef, milk, crumbs, onion, 1 tsp. salt & pepper. Shape into 16
balls. Brown well on all sides in 2 tbsp. butter. Remove meatballs from pan. Add
remaining butter. Blend in flour, sugar & remaining salt. Add buttermilk &
mustard, cook, stirring constantly, until thickened. Return meatballs to sauce.
Cover, simmer for about 20 minutes. or until meatballs are done.
4-6 servings.
