Dinosaur Egg Meatloaf

"A fun mini meatloaf shaped like a dinosaur egg, with a cheese surprise inside.
This idea will delight kids of all ages. It is great idea to beat the winter
doldrums. "
Ingredients:
1 pound lean ground beef
1 egg
3/4 cup dry bread crumbs or cracker crumbs
3/4 cup milk
1 teaspoon Worcestershire sauce
1 clove garlic
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon grated onion
8 ounces block or brick of cheese
Method:
Cut cheese into 8 rectangular pieces. Set aside.
Combine all ingredients except cheese. Mix well. Divide beef mixture into 8
equal proportions. Shape meat around each piece of cheese and form into an egg
shape. Be sure cheese is completely encased by meat loaf. Place on greased
cooking sheet. Bake at 350 degrees for about 30 minutes, or until cooked
through. . To serve, pour gravy on plate. Place a scoop of mashed potatoes on
one side of gravy pool. Using the back of a spoon press down center of potato
mound to form a nest shape. Place one mini meatloaf in each potato nest. Garnish
with cooked thin carrot strips or other colorful vegetables.
The surprise will come when the meatloaf is cut and reveals the melted cheese on
the inside.
