Italian Meat Loaf With Sun-Dried Tomatoes
Ingredients:
2 1/2 pounds lean ground beef
1 package pork sausage
3 cloves garlic
2 large carrot -- chopped finely
1 large onion -- chopped
1 teaspoon basil
1 teaspoon oregano
1/4 teaspoon salt
pepper -- to taste
2 1/2 cups bread crumbs
3 egg
1/2 cup tomato catsup
1/2 cup red wine
8 ounces "Bella" sun-dried tomatoes in oil -- chopped
3/4 pound mozzarella
Directions:
Combine all ingredients except cheese in a large bowl. Then place meatloaf
in a greased baking pan. Bake 70 minutes at 375 degrees. Remove from oven
and top with mozzarella cheese, return to oven for 10 more minutes or
until cheese is melted, then enjoy!
