Sweet N Sour Meatloaf
MEATLOAF:
1 lb. sausage
1 lb. ground beef
2 c. bread crumbs
1 tsp. salt
1 med. onion, chopped
2 eggs
1 c. celery, chopped
1/2 c. milk
1/2 tsp. salt
SWEET-SOUR SAUCE:
1 (20 oz.) can pineapple chunks
1/4 c. brown sugar
2 tbsp. cornstarch
1/4 c. vinegar
1 tbsp. soy sauce
1/2 tsp. salt
1 med. green pepper, cut in strips
1/4 c. onion, thinly sliced
1/4 c. pimento, thinly sliced
MEATLOAF:
Mix all ingredients together. Form into a loaf in well
buttered pan (9 x 5 x 3 inches). Bake at 300 to 325 degrees for 2 hours. Remove
from pan onto serving dish. Serve with Sweet-Sour Sauce.
SWEET-SOUR SAUCE:
Drain pineapple, reserve syrup. Combine brown sugar and
cornstarch; add reserved pineapple syrup, vinegar, soy sauce and salt. Cook and
stir over medium heat until thickened and bubbly. Remove from heat, stir in
pineapple, green pepper, onion and pimento. Cook over low heat 2 to 3 minutes or
until vegetables are warmed. Pour part of Sweet-Sour Sauce over meatloaf. Pass
remaining sauce in a bowl.
