Stoney Creek Plantation Hash

3 cups leftover roast or soup meat
4 or 5 med. white potatoes
1 large onion, chopped
4 tablespoons cooking oil
2 tablespoons flour, (level Tb)
2 or 3 beef bouillon cubes
1 pinch basil leaves
garlic powder
Chop meat into small pieces. Let soak in billon cubes dissolved in 2 cups of
boiling water, for a few minutes. Make a medium shade roux with oil and flour.
To roux, add chopped onion and potatoes. Let fry a few minutes. Add meat and
stir well. Cook over low heat, about 2 minutes.
Add sufficient water to cook potatoes, which will make a medium to thin gravy.
Add a pinch of basil leaves and shake or two of garlic powder. Add more water if
necessary. Serve over rice.
