Lobster Stuffed Tenderloin
Ingredients:
5 to 6 lb. whole beef tenderloin
4 Small frozen lobster tails about 4 oz in size
1 Tbsp. melted margarine
1 1/2 tsp. lemon juice
6 slices of bacon partially cooked
1/2 Cup sliced green onions
1/2 Cup margarine
1/2 Cup dry white wine
1/8 tsp. garlic powder
Method:
Cut tenderloin lengthwise to within 1/2-inch of the bottom. Remove thawed
lobster from shells. Cut in half. Place lobster tails end to end inside beef.
Combine the melted margarine and lemon juice. Drizzle on lobster. Close the meat
around and tie the roast together with string. Place in roasting rack. Roast at
425 degrees for 1 hour. Then place the bacon on top and roast 5 or 6 minutes
longer.
Saute onion in the margarine and add wine, garlic powder, and heat. Slice the
roast and spoon on wine sauce.
Serves 12.
