Tuscan Beef Roast Recipe

 


Tuscan Beef Roast

The region of Tuscany is famous throughout Italy for its beef. This simple preparation lets the flavor of the meat shine.

1 boneless sirloin tip roast (about 3 pounds)
3/4 teaspoon dried oregano
3/4 teaspoon salt
1/4 teaspoon black pepper
2/3 cup Chianti or other red wine
3 cloves garlic, minced
1 cup chicken broth
2 tablespoons tomato paste
1 tablespoon water
1 1/2 teaspoons cornstarch
3 tablespoons chopped fresh basil or parsley
1/2 teaspoon grated lemon zest

1. Preheat oven to 500F. Trim any excess fat from beef. In a small bowl, combine oregano, salt and pepper. Rub mixture over beef.

2. Place beef in roasting pan; roast for 15 minutes. Reduce oven temperature to 425F; roast beef until an instant-read thermometer registers 145F for medium-rare, about 30 minutes. Place beef on a cutting board. Cover and let stand.

3. Add wine to roasting pan; stir to scrape up browned bits. Transfer mixture to a saucepan. Add garlic; boil over high heat for 2 minutes. Whisk in broth and tomato paste; boil for 2 minutes. Blend water with cornstarch; add to pan. Boil, whisking, for 1 minute. Add basil and lemon zest. Carve roast; serve sauce on the side.
