Polo Club's Cow Boy Steaks

2 14 oz. ribeye steaks
3 Tbsp. melted butter
1 Tbsp. kosher salt
1 tsp. granulated garlic
2 tsp. coarse ground pepper
1 cup red, yellow, green peppers, diced
1 cup onions, diced
2 medium sized potatoes, boiled and diced
1. Preheat cast iron skillet on high heat for 5-7 minutes. Brush butter on
steaks, season with salt, pepper and garlic on one side only.
2. Sear on seasoned side first for approximately 2-3 minutes. Flip and sear for
approximately 2-3 minutes for rare to medium rare steaks.
3. Accompany with sautéed peppers and onions seasoned to your taste. Garnish
with cowboy potatoes.
4. Simply boil potatoes, slice and sauté with butter, season to taste and serve
with onions and peppers.
