Halloween Suckers
Hard candy suckers & lollipops are among the simplest
candies to make. There ingredients are basic, being
composed of sugar, corn syrup, and flavoring agents
(usually flavored oil bases).
The candy syrup is then poured into molds. (Hard Crack
Stage 290-310°F). This recipe will produce a clear,
sweet hard candy.
INGREDIENTS
2 cup Sugar
1 cup Water
3/4 cup Corn Syrup (light)
1/2 tsp Oil of Cinnamon - or -
1/2 tsp Oil of Peppermint - or -
1/2 tsp Oil of Lemon - or -
1/2 tsp Oil of Orange - or -
1/4 tsp Oil of Cloves
Food Coloring
Confectioners' Sugar
Combine the ingredients, sugar, water and corn syrup in
a heavy 2 quart saucepan. Cook, stirring constantly
until sugar is dissolved; then lower heat and boil
without stirring until the candy thermometer reads
300°F. If sugar crystals form on sides of pan wipe off
using a wet paper towel.
Remove from heat, add coloring and oil flavoring. Set
one pan of candy over a saucepan containing hot water.
Work quickly. If candy cools too quickly, set over pan
of hot water to soften it. Store in air-tight container.
If using sucker molds, after filling molds, tap to
release air bubbles. Twist sticks in molds to secure
them.
