Coconut Cream Muffins

Ingredients:
2 eggs
1 Tbsp rum
3 Tbsp melted margarine
1 Cup coconut cream ( can buy in market )
1 cup coarsely shredded coconut
3/4 cup chopped pineapple
2 tsp baking powder
1/2 cup sugar
1 3/4 cup flour

Method:
Preheat oven to 400 degrees and prepare pans. Put the first six ingredients into a bowl and mix well. Add the dry ingredients and blend until just mixed. Spoon into pans, sprinkle a little coconut on top of each muffin and bake for 15-20 minutes.

Makes 12 muffins.
