Ingredients: 2 1/2 cups plain flour 2 1/2 teaspoons baking powder 1/2 teaspoon salt 2 tablespoons freshly grated parmesan cheese 2 thick slices salami, finely diced 2 spring onion, finely chopped 2 small tomatoes, deseeded and finely chopped 1 tablespoon finely chopped basil 2 tablespoons commercial pizza topping sauce 3/4 cup milk 1/2 cup olive oil 2 eggs Method: Sift the dry ingredients into a large mixing bowl then stir in the salt, parmesan cheese, salami, onion, chopped tomato and basil. Place the pizza sauce, milk, olive oil and eggs in a blender and process until combined. Make a well in the dry ingredients and quickly stir in the liquid. Do not overmix. Spoon into muffin pans this is enough for a dozen large muffins. Bake at 350 for 20 minutes. |
