Pumpkin Maple Cream Muffins

2 cups flour
3/4 cup packed brown sugar
1/2 cup chopped walnuts
2 tsp baking powder
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
2 eggs
1 cup can pumpkin
3/4 cup evaporated milk
1/4 cup vegetable oil
2 tsp maple flavoring
Cream Cheese Filling - below
Nut Topping - below

Cream Cheese Filling

4 oz softened cream cheese
2 Tbsp packed brown sugar
1 1/2 tsp maple flavoring

Combine cream cheese, sugar and maple flavoring in a small bowl till blended.

Nut Topping

Combine 2 Tbsp packed brown sugar and 1/4 cup chopped walnuts in a small bowl. Set aside.

Combine flour, sugar, nuts, baking powder, cinnamon, baking soda and salt in large bowl. Mix eggs, pumpkin, evaporated milk, oil and maple flavor in medium bowl. Add to flour mixture till just blended.

Spoon into 12 greased muffin cups. Dollop 1 heaping teaspoon of cream cheese filling into center of each cup, pressing into batter slightly. Sprinkle with nut topping. Bake at 400F for 20-25 minutes until toothpick comes out clean. Cool in pan for 5 minutes, serve warm.
