Very Sour Dough

1 package Yeast
1 tablespoon vinegar
2-1/4 cups warm water
1 teaspoon salt
2 tablespoons sugar
2 cups unbleached flour

Dissolve yeast in 1/4 cup warm water Add sugar, vinegar, salt,and unbleached flour. Add remaining water until a creamy batter is formed. Place in a glass bowl, cover with plastic wrap and let sit until it starts to ferment. About 3 days. It will take on a powerful boozy aroma. Stir again. It is now ready to use.

Feeding starter:
1/2 cup warm water
1/2 cup unbleached flour
1 tablespoon rye flour
