1 pound ground beef
2 medium onions -- chopped
1 clove garlic -- minced
1/2 teaspoon oregano
10 ounces frozen spinach -- chopped
1 1/2 teaspoons salt
1/4 teaspoon pepper
2 Tablespoons grated Parmesan cheese
In large non-stick skillet, over moderate heat, brown beef and add onion, garlic
and oregano. Cook until onion is tender. Pour off any accumulated fat.
Meanwhile cook spinach lightly, drain thoroughly and press out liquid. Stir into
meat mixture. Add salt and pepper to eggs and beat well. Pour eggs over hot meat
mixture and stir gently. Sprinkle grated cheese over top.
