Strawberry Laced Chocolate Waffles
1/2 cup melted butter
1/4 cup sugar
2 eggs; separated
1/2 teaspoon vanilla
3 ounces bittersweet chocolate, melted and cooled
1 1/2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk or 3/4 cup buttermilk
fresh strawberries; sliced and sweetened
Beat butter and sugar with electric mixer. Add egg yolks, one at a time, vanilla
and cooled chocolate. Mix well.
In separate bowl, mix together the flour, baking powder and salt.
Add the flour mixture to the chocolate mixture alternately with milk, blending
with each addition.
With an electric mixer, beat the egg whites until stiff.
Fold into batter. Place about 1/3 cup batter in hot waffle iron, close the cover
and bake until the steaming stops; these waffles are dark so don't judge
doneness by the color.
Serve sprinkled with powdered sugar and strawberry slices.
Yield: 5 to 6 waffles
