Cinnamon Blintzes  Recipe


Cinnamon Blintzes             


Ingredients:
Prepare Bread:
2 loaves of fresh white bread
Trim crust from bread and roll each slice with rolling pin until flat.

Filling:
2 8-ounce packages of cream cheese, softened
1/2 cup sugar
2 egg yolks
Cream together.

Coating:
1 cup sugar
4 teaspoons cinnamon
2 sticks melted margarine

Method:
Mix together sugar and cinnamon in separate bowl and set aside. Melt margarine in 8" x 8" pan or glass dish. Spread cheese filling thinly on each slice of bread. Roll up bread one at a time. Dip rolled bread lightly in melted margarine (do not soak) next roll in sugar and cinnamon mixture. Place coated rolls in square Tupperware box to freeze. When ready to serve, take out what you need and bake frozen (do not thaw before baking). Place blintzes on ungreased baking sheet 400 for 15 minutes.
