This recipe uses the same spices as a regular gingerbread and can be served with
many different toppings.
1-1/2 cups flour
1/2 cup sugar
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 cup milk
1/4 cup vegetable oil
1/4 cup molasses
2 eggs, separated
Sift flour, sugar, baking powder, baking soda, salt, cinnamon, ginger and nutmeg
into a large mixing bowl. Combine milk, oil, molasses and egg yolks in medium
bowl. Stir to mix. Add milk mixture to flour mixture; stir until dry ingredients
are just moistened. Whisk egg whites in a bowl until soft peaks form. Gently
fold egg whites into batter. Cook on a preheated waffle iron until browned.
