Sour Cream Waffles
Ingredients:
3 eggs, separated
3/4 cup milk
1/2 cup unsalted butter, melted
3/4 cup sour cream
1-1/2 cups all purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1 Tbs. sugar
1/2 cup maple syrup
Method:
Preheat waffle iron. Beat egg yolks in a large mixing bowl until pale. Add milk,
butter and sour cream and beat until smooth. In another bowl, mix flour, baking
powder, baking soda and sugar. Transfer dry ingredients to egg yolk mixture and
beat until thoroughly blended. In another bowl, beat egg whites until stiff.
Gently fold into batter with a spatula. Cook in a hot waffle iron and serve with
maple syrup.
