ALMOND LEGEND CAKE

CAKE
1/2 cup chopped almonds
1 pkg. Pillsbury Plus@ Yellow Cake Mix
1/2 cup orange juice
1/2 cup water
1/3 cup oil
1/2 teaspoon almond extract
3 eggs
1 whole almond
GLAZE
1/2 cup apricot preserves
2 to 3 teaspoons orange juice
Heat oven to 350º. Generously grease 12-cup fluted tube or l0-inch tube pan.
Gently press 1/2 cup chopped almonds in bottom and half way up sides of pan. In
large bowl, combine all ingredients except whole almond at low speed until
moistened; beat 2 minutes at high speed. Stir in whole almond. Carefully pour
batter into nut-lined pan.
Bake at 350º for 35 to 45 minutes or until toothpick inserted near center comes
out clean. Cool upright in pan 10 minutes; invert onto serving plate.
In small bowl, combine glaze ingredients, adding enough orange juice for desired
consistency. Spoon over warm cake. Cool completely.

HIGH ALTITUDE-Above 3500 Feet: Add 1/4 cup flour to dry cake mix. Bake at 375°
for 35 to 45 minutes.
