Luscious Key Lime Cake
Ingredients
Cake:
1 box (18.25 ounces) Duncan Hines Moist Deluxe lemon supreme cake mix
1 box (4-serving size) lemon instant pudding and pie filling mix
4 eggs
1 cup oil
3/4 cup water
1/4 cup key lime juice
Glaze:
2-1/4 cups confectioners sugar, divided
1/3 cup key lime juice
2 tablespoons butter or margarine (melted)
Lime slices for garnish
Fresh strawberries for garnish
Directions:
Preheat oven to 350 degrees. Grease and flour 10-inch bundt pan. For cake,
combine cake mix, pudding mix, eggs, oil, water and lime juice in large bowl.
Beat at medium speed with electric mixer for 2 minutes. Pour into pan. Bake at
350 degrees for 50-60 minutes or until toothpick inserted in center comes out
clean (check at 40 minutes). Cool in pan 25 minutes on rack. Invert onto cooling
rack (10 minutes). Return cake to pan. Poke holes in top of warm cake with
toothpick or ling-tined fork. For glaze, combine 2 cups powdered sugar, lime
juice, water and melted butter in medium bowl. Pour slowly over top of warm
cake. Cool completely. Invert onto serving plate. Dust with powdered sugar.
Garnish with lime and strawberry slices, if desired. 12-16 servings.
