Appalachian Mud Cake Recipe


Appalachian Mud Cake

Cake:
2 cups all-purpose flour
1 teaspoon baking powder
2 eggs, beaten
5 ounces unsweetened chocolate
1 cup butter
1 cup shredded coconut (optional)
1 1/4 cups strong coffee
2 cups sugar
1/4 cup bourbon
1 1/2 cup heavy cream
1 teaspoon vanilla
cocoa (for dusting)

Preheat oven to 350 degrees.
Grease two 9-inch cake pans, dusting with cocoa.
Sift flour and baking powder.

In double boiler, melt chocolate and butter
with sugar and coffee, stirring until smooth.

Add bourbon and let cool slightly.
With mixer, beat in eggs and vanilla. Stir in coconut.
Pour batter into pans and bake for 25-30 minutes.
Remove from oven and cool.

Filling:
1 cup evaporated milk
1/2 cup brown sugar
1/2 cup butter
3 egg yolks, beaten
3 ounces unsweetened chocolate
2 cups chopped walnuts
1 cup miniature marshmallows
1 teaspoon vanilla

In double boiler, combine milk, sugar, butter,
chocolate, egg yolks, and vanilla.
Cook approximately 10 minutes, stirring often until smooth and thick. Remove from double boiler and stir in
marshmallows until melted; add walnuts.

Cool until mixture reaches spreading consistency.
With a bread knife, slice each cake layer horizontally,
creating four layers. Place first layer on plate and spread with filling; repeat with two more layers.

Frosting:
12 oz. semi-sweet chocolate
1 1/2 cups of heavy cream
3 tablespoons sugar
3 tablespoons butter

Melt chocolate in double boiler.
Stir in sugar, butter and cream.
While frosting cools slightly,
top Mud Cake with remaining layer.
Pour very warm frosting over cake.
