Chocolate Mayonnaise Cake

2 cups sifted all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup good quality cocoa powder
3/4 cup mayonnaise (use the best you can find for optimum flavor and texture
1 cup sugar
1 cup water
1 teaspoon vanilla
Preheat oven to 350 degrees f. Grease a 9-inch square cake pan.
In one bowl, sift together first 5 ingredients (flour, baking powder, baking
soda, salt, cocoa powder). Set aside.
Combine mayonnaise and sugar in a separate bowl. (You will finish mixing the
cake in this bowl.) Blend until smooth.
Add the dry ingredients alternately with the water and the vanilla to ensure
even mixing. Beat until smooth.
Spoon into the greased 9-inch square pan.
Bake for 35 minutes or until done. The top should spring back when lightly
touched. Do not over-bake.
