Chocolate Mousse Cake

Crust:
1-1/2 packages Oreo cookies
1/2 stick butter, melted
Mix together ingredients in a food processor. Put mixture into a nine-inch
spring-form pan. Bake at 350 degrees for about seven minutes.
Mousse:
12 oz. chocolate chips
Pinch of salt
1 tsp. vanilla
4-1/2 cups heavy cream, divided
1/2 cup sugar
In a food processor, mix chocolate, salt and vanilla. Bring one cup of the cream
to a strong simmer. With the food processor running, add cream and continue to
mix for 20 seconds. Pour contents into a bowl. In another bowl, whip remaining
cream with sugar until stiff. Fold into chocolate mixture, then pour into
spring-form pan, on top of the crust, and chill to set, about 8 hours. Top with
shaved chocolate and serve with raspberry sauce.
Raspberry Sauce:
1 cup raspberries, fresh or frozen
Sugar to taste
Mash the raspberries and strain seeds out with a strainer. Add sugar to taste.
Mix thoroughly and use to garnish cake.
