Chocolate Zucchini Cake

One of my favorite cake recipes! Tried & True
2 cups all-purpose flour
2 cups white sugar
3/4 cup unsweetened cocoa powder
2 tsp baking soda
1 tsp baking powder
1/2 teaspoon salt
1 tsp. vanilla extract
1 1/2 cups canola oil
3 cups grated zucchini
3/4 cup mini choco chips
Preheat oven to 350 degrees F. Grease and flour a 9x13 inch baking pan.
In a medium bowl, stir together the flour, sugar, cocoa, baking soda, baking
powder and salt. Add the eggs, oil and vanilla. Mix well. Fold in the mini choco
chips and zucchini until they are evenly distributed. Pour into the prepared
Bake for 50 to 60 minutes in the preheated oven, until a knife inserted into the
center comes out clean. Cool cake completely before frosting with your favorite
frosting. ( I use Coffee Butter Frosting) Recipe follows.
Coffee Butter Frosting
3 cups confectioners sugar
2 tablespoons un-sweeten cocoa powder
2/3 cup butter or margarine, softened Both are good, but I prefer butter)
2 tablespoons strong brewed coffee
In a small bowl, stir together the confectioners sugar and cocoa powder. In
another bowl, beat the butter until creamy, gradually beat in the sugar mixture,
being sure to scrape the bottom of the bowl, occasionally. Finally stir in the
coffee, and beat until smooth.
