Fresh Cherry Cake
6 Graham Crackers
2 lbs. fresh cherries
3/4 lb ground almonds
1 cup + 2 tsp sugar
1/2 tsp cinnamon
5 eggs
2 Tbsp liqueur (your choice)
1 lemon
1 cup flour
Preheat oven to 350°
Crush the crackers and spread over the bottom of greased 9" cake pan.
Pit cherries. Arrange on top of crackers
Mix together the almonds, 1/4 cup of sugar and cinnamon
Separate the eggs
Beat together the egg yolks, remaining sugar, liqueur, and grated rind and juice
of the lemon
Stir in the almond mixture
Lightly fold in the flour
Beat the egg whites until stiff
Fold into cake mixture.
Spread the cake mixture over the cherries
Bake for about an hour
After it cools, dust with confectioners sugar
