Fudge Banana Cake
Cake:
3 extra ripe bananas
1-1/3 cup sugar
1/2 cup sweet butter, softened
3 eggs
3 Tbsp. Amaretto Liqueur
1 tsp. pure vanilla extract
1-1/3 cups Cake flour, sifted
1/3 cup unsweetened Cocoa
1 tsp. baking soda
1/2 tsp. salt
Mash banana, set aside.
Beat sugar and butter mix well until light and fluffy. Beat in eggs, Liqueur and
vanilla extract
Combine dry ingredients. Add to sugar mixture alternately with bananas. Beat
well.
Pour batter into greased Bundt pan. Bake at 350º for 60 minutes. Cool 10 minutes
in pan, and cool completely for the glaze.
Banana Chocolate Glaze:
1 extra ripe banana, PUREED
1/2 tsp. banana extract
1-oz semisweet chocolate, melted
With wire whisk, beat pureed and banana extract into melted chocolate. Drizzle
glaze over top of cake.
