Gingerbread Carrot Cake
3 cup all-purpose flour (sifted)
1 tsp. salt
1 tsp. baking powder
2 tsp. baking soda
1/2 cup canola oil
1/2 cup unsweetened orange marmalade
1 cup brown sugar, packed
2 Tbsp ground ginger
1 cup grated carrots
Preheat oven to 350º. Butter bundt pan.
In large bowl, mix together flour, salt, baking powder, baking soda, oil,
marmalade. sugar, and ginger. Stir in carrots.
Pour batter into pan. Bake for one hour and 15 minutes.
Cool for 10 minutes in pan
