Caramel Cake And Icing

4 eggs, separated
1 c. butter
2 1/2 c. flour
2 c. sugar
1 c. milk
2 heaping t. baking powder
1 t. vanilla
Icing:
2 1/2 c. sugar
1 T. flour
1 c. milk
1 1/2 c. sugar
1/2 c. cream
4 T. butter
1 t. vanilla
1 -11/2 c. chopped pecans
Cake:
Beat whites. In another bowl cream butter, 1 T. Flour, and sugar. Add egg yolks
one at a time and then other ingredients. Last fold in the egg whites. Pour into
2 greased and floured 9" pans and bake at 325 degrees for 40- 45 minutes.
Icing:
In a saucepan, bring to a slow boil 2 1/2 c. sugar mixed with flour and milk. In
a heavy iron skillet brown 1 1/2 c. sugar until golden brown. Pour in boiling
ingredients from saucepan to browned sugar and cook a few more minutes until it
forms a soft ball in cold water. Remove from heat and add cream, butter and
vanilla and beat. Fold in pecans and spread on cake.
