Molten Lava Cake with Chambord Truffle

4 ounce Chambord
5 egg yolks
8 ounce semi-sweet chocolate
8 ounces butter
5 whole eggs
3 ounces sugar
1.6 ounces flour, sifted
1 cup milk
3 tsp sugar
Preheat oven to 375. Whip the egg yolks with the sugar. Melt the chocolate with
the butter in a double boiler. Wait until room temperature. Incorporate the
egg/sugar mixture and Chambord into the chocolate.
Mix the sifted flour.
Butter and flour 4 ounces molds, fill with mixture and bake for 3-7 minutes.
Center of cake will be soft to the touch.
Unmold upon removing from the oven into the plates. Serve immediately, center
will be liquid. For a light touch, mix one cup of milk with 3 tblsp sugar and
fill a siphon or pressure whipper.
