16 ounces rhubarb, sliced
1/2 cup butter
3 1/2 ounces almond paste
1/2 cup plus 2 tablespoons granulated sugar
1 teaspoon vanilla extract
1 teaspoon grated lemon zest
3 medium eggs
1 cup cake flour
2 1/2 teaspoons baking powder
Grease and flour a 10-inch springform pan. Heat oven to 360 degrees F.
Cream almond paste and butter together. Add sugar and spices. Add eggs, one at a
time, beating until well blended. Add flour mixed with baking powder, stirring
just to blend well on low speed of electric mixer. Spread batter in pan and put
rhubarb into dough. Bake about 45 minutes and cool on rack.
Dust with confectioners' sugar if desired.
