Strawberry Upside-Down Cake

1 Cup frozen apple juice concentrate, thawed
3 Cups strawberries
1-1/2 Cups flour
2 Teaspoons baking powder
1/2 Teaspoon salt
2/3 Cup sugar
1 egg
2/3 Cup milk
1/2 Cup oil
2 Teaspoons vanilla

Spray a 10 inch ovenproof skillet with non-stick spray. Pour 1/4 cup of the
apple juice concentrate in the pan. Arrange the strawberries, in the pan, in a
single layer. Place pan in the freezer for 15 minutes.
In a large bowl, stir together flour, baking powder, salt, and sugar. Add egg,
milk, oil and vanilla; beat on medium speed for 2 minutes.
Remove the skillet from the freezer. Pour the batter over the berries. Bake, in
the skillet, at 350F for 30-35 minutes.
Let the cake cool, in the skillet, for 15 minutes. Loosen the edges with a knife
and invert to a serving plate. Let the skillet rest over the serving plate for 5
minutes (to allow any juices to run onto the cake) before lifting the skillet to
reveal the strawberry upside-down cake. Enjoy.
