1890 Coffee Cake Recipe

This recipe was my Great-Grandmothers. The directions have been "modernized" to fit today's cooking methods. The ingredients are the same, but the cooking method has been changed. She cooked on a wood stove.

Ingredients
1 cup all purpose flour
1/2 cup sugar
1 tblsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 cup cooking oil
1 egg
1/2 cup milk

Directions
Preheat oven to 400 degrees. Grease and flour a 9 inch square pan. Place all ingredients in a medium sized bowl and stir until well blended. Spread in pan. Sprinkle thickly with layers of sugar and cinnamon (about 4 layers of each in all). Bake for 20 minutes or until a tooth pick comes out clean.

This recipe doubles easily and then can be baked in a 9x13 inch pan for 25 minutes..
