Buttermilk Orange Coffee Cake

Ingredients:
3 cups flour
2 tsp. baking powder
1 tsp. salt
1/2 cup buttermilk
1/2 cup orange-juice concentrate
2 softened sticks butter
2 cups sugar
5 eggs
2 Tbs. orange zest
1 Tbs. vanilla
GLAZE:
3/4 cup sugar
1/4 cup orange juice
Directions:
Whisk together flour, baking powder and salt; set aside. Combine buttermilk and
orange-juice concentrate; set aside. Beat together butter and sugar until light
and fluffy; beat in eggs one at a time.
Add half the flour mixture and half the buttermilk mixture, then repeat, beating
until smooth after each addition. Beat in orange zest and vanilla. Pour into a
12 cup bundt pan coated with cooking spray and bake at 350 for 55 to 60 minutes,
until a toothpick inserted in the center comes out clean. Let cool on a wire
rack 10 minutes; remove from pan. To make glaze, boil together sugar and orange
juice in a small saucepan until sugar is dissolved; let cool and brush over warm
cake.
