Cream together:
2 sticks margarine
1 1/3 c. sugar
2 eggs
Sift:
2 c. flour
1/2 tsp. soda
1/2 tsp. baking powder
Add to the above mixture alternately with:
1 c. sour cream
1 t. vanilla
Mix in small dish:
3/4 c. chopped walnuts
2 tsp. cinnamon
3 T. sugar
Pour one-half of batter into greased (with margarine) angel food cake pan.
Sprinkle one-half of the nut mixture on top, then put remaining cake batter on
top, and finally sprinkle the rest of the nut mixture on top. Place on bottom
oven rack in cold oven. Turn to 350 degrees and bake for 1 hour. Leave in pan
until cold. Turn out on serving dish.
“This coffee cake has been a tradition for Christmas morning in our family for
over 30 years. It can be kept fresh in the refrigerator or frozen and served
later. Although the recipe calls for sour cream, fat free sour cream doesn’t
seem to affect the outcome. It is always delicious.”
