3/4 cup firmly packed brown sugar
2 tablespoons good quality ground cinnamon
6 tablespoons unsalted butter, melted
6 tablespoons flour
1/2 cup unsalted butter
1 1/2 cups sugar
2 large eggs
1 cup milk
3 cups all purpose flour
1 tablespoon plus 1 teaspoon baking powder
1 teaspoon salt
2 cups fresh peaches, peeled, and sliced 1/2 inch thick
Mix together the top ingredients, and set aside. Preheat oven to 350 degrees.
Butter or spray a 9 by 13 inch pan, or use a non-stick kind. Cream the butter
and sugar until light and fluffy, continue beating and add the eggs, and then
the milk. Fold in the dry ingredients. Spread half of the batter into the pan
and top with half of the streusel and the peaches. Spread the remaining batter
over the peaches and top with the remaining streusel. Bake the cake for about 30
minutes. Cool 10-15 min., then serve warm. Great with a dollop of whipped cream,
or French vanilla ice cream.
