Irish Apple Coffee Cake

Ingredients
1 cup of corn oil
2 cups of white sugar
2 eggs
1 teaspoon of vanilla
2 1/2 cups of flour
2 teaspoons of baking powder
1 teaspoon of soda
1 teaspoon of salt
1 teaspoon of cinnamon
4 cups of apples, diced
1 cup of nuts, chopped
1/3 cup of butterscotch morsels
Directions
Cream oil, sugar, eggs and vanilla until fluffy. Sift together dry ingredients,
add to other mixture and mix well. Add apples and nuts. Pour into a 9 x 13 inch
pan, lightly greased on bottom only. Sprinkle the butterscotch chips on top.
Bake 60 minutes at 350ºF.. Serve hot or cold, or with a sauce or whipped
topping.
