Nectarine Raspberry Coffee Cake

Ingredients:
1 1/2 cups all purpose white flour
1/2 cup whole wheat pastry flour
3/4 cup sugar
4 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 large egg
1 cup nonfat buttermilk
3 Tbsp. canola oil
1 tsp. vanilla extract
Topping:
2 nectarines, cut into 1/8 inch thick slices
1/2 cup fresh or frozen raspberries
1/4 cup Grape Nuts cereal
3 Tbsp. sugar
2 Tbsp. chopped pecans
1/4 tsp. cinnamon
Directions:
To make cake: Preheat oven to 400*F. In a medium bowl, combine flours, sugar,
baking powder, cinnamon and salt. In a large bowl, whisk together the egg,
buttermilk, oil and vanilla. Add the flour mixture and stir just enough to
blend. Spray a 9 inch springform pan with nonstick cooking spray. Pour batter
into pan.
Arrange nectarine slices and raspberries over batter. In a small bowl, combine
remaining ingredients. Sprinkle mixture over the fruit. Bake for 40 to 45
minutes or until a cake tester inserted in center comes out clean. Let cool in
pan on a rack for 10 minutes. Loosen edges and remove from pan. Server warm.
