Peach Crumb Coffee Cake.

1 package 2 layer size yellow cake mix (pudding type)
1 cup flour
1 package active dry yeast
cup warm strong coffee (115degrees)
3 eggs
1 21-ounce can peach pie filling
2 tablespoons granulated sugar
teaspoon cinnamon
cup butter
1 cup butter or margarine
1 cup powdered sugar
1 tablespoon corn syrup
1 tablespoon strong brewed coffee

Reserve 1 cup of the dry cake mix for topping. In large mixing bowl combine the remaining dry cake mix, the flour, yeast, cup coffee and eggs. Mix by hand about 100 strokes. Spread batter in bottom of greased 13x9x2 inch baking pan. Spoon pie filling evenly over dough.

In a bowl combine the reserved cake mix, the granulated sugar and the cinnamon. Cut in the butter with fork or pastry blender till mixture resembles fine crumbs; sprinkle over pie filling. Bake in 375 oven for 30-35 minutes. Combine powdered sugar, corn syrup, and remaining coffee; drizzle over cake.
Makes 12 servings.
