Rhubarb Coffee Cake

Ingredients:
2 cups all purpose flour
1 cup sugar
4 tsp. baking powder
1/2 tsp. salt
1 large egg
1 cup buttermilk
1/4 cup vegetable oil
2 tsp. vanilla extract
2 cups rhubarb pieces, trimmed and cut into 1/2 inch pieces
topping:
1/4 cup sugar
1/2 tsp. cinnamon
Directions:
Preheat oven to 350*F. Spray an 8 inch square baking pan with nonstick cooking
spray and set aside. Sift flour, sugar, baking powder, cinnamon and salt into a
medium bowl. In a large bowl, whisk together the eg, buttermilk, vanilla, and
oil. Add the flour mixture and stir just to blend. Stir in rhubarb, then turn
into prepared pan, spreading evenly. In a small bowl, combine sugar and cinnamon
for topping. Sprinkle evenly over cake. Bake 45 to 50 minutes, or until top is
brown and crackled and pick inserted in center comes out clean. Cool in pan on
wire rack for 15 minutes; serve warm.
