Applesauce Icebox Cake
Ingredients:
2 c. sweetened applesauce
1/2 c. finely chopped walnuts
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
16 (4 3/4 x 2 1/2-inch) graham crackers
confectioners sugar
whipped cream (optional)
Directions:
Line an 8 x 4-inch loaf pan with waxed paper. In small bowl combine applesauce,
walnuts, cinnamon and nutmeg. Arrange a layer of graham crackers in loaf pan,
trimming wherever
necessary to make crackers fit. Top with some of the apple- sauce mixture.
Repeat layering graham crackers and applesauce mixture, ending with a layer of
graham crackers. You should
have 7 applesauce and 8 graham cracker layers in all. Cover loaf tightly;
refrigerate 6 to 8 hours. Un-mold cake; sprinkle with confectioners sugar. Slice
and serve with whipped cream, if desired.
