Key Lime Icebox Cake
Ingredients:
1 c. fine graham crackers (12 to 14 - 2 1/4-inches)
3 Tbsp. butter, melted
2 eggs, separated
1 (15 oz.) can Eagle Brand sweetened condensed milk
1/2 c. fresh key lime juice ( Not bottled )
1 Tbsp. grated lime rind
1/4 tsp. vanilla
1/4 c. sugar
3 to 4 drops green coloring
Directions:
Combine crumbs and butter; reserve 1/4 cup crumbs.Press on bottom and sides of
tray; chill. Beat egg yolks until thick. Combine with Eagle Brand. Add lime
juice and vanilla. Stir until mixture thickens. Beat egg whites into soft peaks.
Add sugar; beat until stiff but not dry. Fold into Eagle Brand and lime mixture.
Pour into tray. Border with crumbs; top with sliced lime rind. Freeze until firm
(4 to 6 hours).
Makes 6 servings.
