Tropical Sun Icebox Cake
Ingredients:
2 envelopes Knox gelatin
1/2 c. cold water
3 egg yolks, beaten
1 c. sugar
2 c. milk
juice and rind of 1 1/2 lemons
1 (9 oz.) can crushed pineapple
2 c. cream, whipped
3 beaten egg whites
1/2 c. chopped nuts
coconut
maraschino cherries
Directions:
Soften gelatin in cold water. Combine egg yolks, milk and sugar. Cook on low
heat until coats spoon; cool. Add egg whites, juice, gelatin, pineapple and half
of cream. Line 9 x 13 x 2-inch cake pan with layer of broken angel food cake,
then layer of custard, layer cake and custard, etc. Top with rest of whipped
cream, coconut, then cherries and nuts. Refrigerate.
Freezes nicely.
