Artichoke And Veal Casserole                 

1 Package frozen artichokes - thawed
1/2 Cup flour
3 tbsp. butter
3 tbsp. olive oil
2 1/2 tsp. salt & pepper
1/4 cup beef broth
12 veal scallops
1/3 grated parmesan cheese
1 egg beaten

Saute artichokes in butter for 5 min. Season with salt & dip the veal scallops in the egg then in the mixture of flour, pepper and salt. Heat the oil in a skillet, brown veal on both sides. Arrange in a greased shallow casserole, add the broth, cover veal with artichokes and sprinkle with cheese. Bake in a 375 degree oven for 10 minutes until brown.
