Hopkins’ Boarding House Broccoli Cheese

10 ounce package frozen chopped broccoli
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup butter or margarine
1 cup cooked rice
1 cup shredded cheddar cheese
1 cup cream of mushroom soup
salt and pepper to taste
Cook broccoli in small amount of water until done. Drain. Sauté celery and onion
in butter. Mix remaining ingredients in casserole dish. Bake in 350°F oven until
bubbly, about 30 minutes. Can be prepared the night before and baked just before
serving. Serves 6.
