Ham and Sweet Potato Casserole
Posted By: TUDDLES Sat 15 Oct 2005 4:56 pm
Ingredients
1 pound sweet potatoes
Grated rind of 1 orange
Freshly ground pepper
1/8 teaspoon grated nutmeg
1/2 pound cooked ham, cut in pieces about l/8-inch thick
1-2 teaspoons prepared mustard
1-1/2 cups milk
2 tablespoons sesame seeds
Instructions
Peel the sweet potatoes and either slice them very thin or grate them. Spread
half the potatoes over the bottom of a shallow 1-1/2-quart casserole, sprinkle
half of the grated orange rind over, and season with some pepper and nutmeg (if
you are using country ham, you probably won't need salt; otherwise season
lightly with salt). Arrange overlapping pieces of ham over the potatoes, spread
mustard on top, then finish with the remaining potatoes and a little more of the
pepper and nutmeg. Pour the milk over all. Cover lightly with foil and bake in a
375-degree F. oven 40 minutes, remove the foil, sprinkle sesame seeds over the
top, and bake another 15-20 minutes until the potatoes are tender and all the
liquid has been absorbed.
